Tags are labels you stick on people. Someone can have as many as you like, and you can filter your whole list by them.
Tags or groups?

Groups are folders. They nest, and someone sits inside them. Good for structure: Work, Family.

Tags are labels. They don't nest, and someone can carry many. Good for anything cutting across your list: climbing, investor, sourdough, favourite.
Most people end up using both.
Tagging someone

Open the contact.

Scroll to the tags section near the bottom and tap + Add Tag.

Pick an existing tag, or type a new name and create it.
Remove a tag by tapping its chip.
Filtering by tag
In the Contacts tab, tag chips run along the top. Tap one to filter.
Tap several and you get people with all of them — so climbing + London finds London climbers, not everyone who's either.
With more than ten tags, an icon appears for a full-screen picker that shows how many people match as you choose.
Managing tags
Settings → Organisation → Tags — the full list with how many people carry each, plus rename, delete and search.
Deleting a tag removes it from everyone. It never deletes contacts.

Both apply to everyone — there's no paid upgrade for tags.
Near either limit, Deeta mentions it once so you can tidy up rather than hitting a wall.
Troubleshooting
I can't add another tag to someone. They're at 30. Remove one first — you can always remove tags even at the limit.
The Create "…" row is greyed out. Either that contact is at 30, or you have 500 tags in total. The line under it says which.
My tag chips have gone. Either you have no tags yet, or a filter is hiding everything. Tap Clear.
Someone I tagged isn't in the filtered results. With several tags selected, only people with all of them show. Deselect one.
I got a message about approaching the limit and it hasn't reappeared. It's shown once per session, deliberately — the count is on the tags screen whenever you want it.
Questions
Can I use tags to find people, not just filter? Yes — search finds tag names too.
Do tags sync to my iPhone's contacts? No. Tags stay in Deeta.
Is there a "favourites" feature? Not as such — make a favourite tag and filter by it. That's the intended way, because iPhone's own Favorites aren't something an app can read.
Can I rename a tag without losing who has it? Yes. Renaming keeps every assignment.
Do tags travel when I share a contact? No. Tags are your own labels and stay with you. See Sharing someone else's contact.
